Making a good fit for someone else's shape without a fitting

I usually make dresses by draping on a mannequinn and then turning it into a pattern, then I'll adjust the pattern according to someone's measurements. However, women are all proportioned so differently and usually I have to make adjustments when I do a fitting, even though I adjusted the pattern to their measurements. 

So here is my problem, if I am making a dress for someone who lives far away, I can see them via video chat (I know some coutouriers operate this way) but I'm still not sure how I can ensure a good fit. I could try padding the mannequin, but without seeing them in person that seems like it would be difficult.

This is new territory for me, I rely heavily on those fittings, so any creative ideas or experience you have to share would be great!
