Best fabric for heavy/warm vest

I do not quilt nor have I had much experience with fleece.
My dh would like a vest for cold weather and he likes the
quilted ones.
Any suggestions as to what fabric to use?
I found a pattern online which looks quilted, while searching but
I don’t know ifI can locate one in the stores.
Someone said maldenmills polartec fleece was good and they have
helpful hints online, but what can I use for the reversible side?

    You could quilt the vest, making a sandwich out of cotton or wool outside, wool in the center, and a soft fabric liining.

    If you don't want to piece the outer layer, you could use a print or plaid and quilt around the design with the machine.
    Remember to cut the pieces larger than the pattern as the quilting "uses up " a lot of fabric.
